Don't be fooled by the word "bread" in this title. It's pretty much cake. Yummy, gooey, steamy, zucchini cake. Serve with butter. :)
Ingredients:
- 2 eggs
 - 1 1/3 c brown sugar
 - 2 t vanilla
 - 2/3 c oil
 - 3 c flour
 - 1 t soda
 - 1 t salt
 - 3 t cinnamon
 - 1-3 c shredded zucchini
 - opt: 1 c chopped pecans or walnuts
 
Directions:
- Preheat oven to 350.
 - Blend eggs, sugar, vanilla, and oil. Sift flour, soda, salt, and cinnamon and mix with wet ingredients. Add zucchini and opt nuts.
 - Grease two loaf pans. Pour batter equally into pans. Bake 1 hour.
 - Run a butter knife around the edges to loosen bread. Dump onto a wire rack to cool. Bread cuts easier when allowed cooled 10 min...if you can wait that long!
