Zucchini Bread


Original recipe from Simply Recipes.

Don't be fooled by the word "bread" in this title.  It's pretty much cake.  Yummy, gooey, steamy, zucchini cake.  Serve with butter.  :)

Ingredients:
  • 2 eggs
  • 1 1/3 c brown sugar
  • 2 t vanilla
  • 2/3 c oil
  • 3 c flour
  • 1 t soda
  • 1 t salt
  • 3 t cinnamon
  • 1-3 c shredded zucchini
  • opt: 1 c chopped pecans or walnuts
Directions:
  1. Preheat oven to 350.
  2. Blend eggs, sugar, vanilla, and oil.  Sift flour, soda, salt, and cinnamon and mix with wet ingredients.  Add zucchini and opt nuts.  
  3. Grease two loaf pans.  Pour batter equally into pans.  Bake 1 hour.
  4. Run a butter knife around the edges to loosen bread.  Dump onto a wire rack to cool.  Bread cuts easier when allowed cooled 10 min...if you can wait that long!
