Macaroni and Cheese


Original Recipe from Linda Eyre's book Grandmothering.

Ingredients:
  • 3 c dry noodles, cooked and drained (8-10 c water, ½ t salt)
  • 1 can evaporated milk (1 ½ c milk)
  • 2 eggs, beaten
  • 1 t salt
  • 2-3 c grated cheese
  • ¼ t dry mustard, garlic, and onion powders, optional
Directions:
  1. To cook noodles: fill a large pan halfway with water and ½ t salt and place over high heat. Bring water to boil, add noodles, return to boil. Turn heat to medium and simmer 8-10 minutes. Drain.
  2. Return noodles to pan. Add canned milk, then crack eggs into empty can and beat well. Add remaining ingredients to pan. 
  3. Return pan to stove over low heat. Cook, mixing, until cheese is melted, 2-5 min. 
  4. Enjoy!
