Original Recipe from Linda Eyre's book Grandmothering.
Ingredients:
- 3 c dry noodles, cooked and drained (8-10 c water, ½ t salt)
- 1 can evaporated milk (1 ½ c milk)
- 2 eggs, beaten
- 1 t salt
- 2-3 c grated cheese
- ¼ t dry mustard, garlic, and onion powders, optional
- To cook noodles: fill a large pan halfway with water and ½ t salt and place over high heat. Bring water to boil, add noodles, return to boil. Turn heat to medium and simmer 8-10 minutes. Drain.
- Return noodles to pan. Add canned milk, then crack eggs into empty can and beat well. Add remaining ingredients to pan.
- Return pan to stove over low heat. Cook, mixing, until cheese is melted, 2-5 min.
