Tomato Basil Quiche


Original recipe from 5 Dollar Dinners

Ingredients:
  • 2 (9-in) pie crusts
  • 6 eggs
  • 1 1/2 c milk
  • 1 small onion, chopped
  • 1 med summer squash, chopped
  • 2 med tomatoes, chopped (or 1 can)
  • 2 tsp dried basil
  • 2 garlic cloves, minced
  • salt/pepper to taste
Directions:
  1. Preheat oven to 350.  Press dough into a 9x13 pan.  
  2. In a medium bowl, beat eggs, milk, salt, and pepper.  Dump in all chopped vegetables.  Mix together, pour over dough.
  3. Sprinkle basil on top of quiche.  Bake for 50 min or until spongy to the touch.
