Original recipe from Simply Recipes.

Ingredients 
  • T oil
  • 1 pepper, diced
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 can tomatoes 
  • 4-8 c broth (water + 1-2 T bouillon)
  • 2 c potatoes, peeled & diced 
  • 3 c corn (2 cans drained)
  • 1 1/2 t chili powder
  • 1 t salt, more to taste 
  • chipotle peppers from can, minced
  • 1 c cream, sour cream, or whole milk
  • 3 c cooked chicken, diced (2 cans)
  • Cilantro, opt, for serving
Directions 
  1. In a large pan over medium heat, warm oil. Saute veg. 
  2. Add tomatoes, broth, potatoes, and seasonings and bring to a simmer. Cook until potatoes are soft.
  3. Add remaining ingredients and heat through.
