Ingredients
- T oil
- 1 pepper, diced
- 1 onion, diced
- 2 garlic cloves, minced
- 1 can tomatoes
- 4-8 c broth (water + 1-2 T bouillon)
- 2 c potatoes, peeled & diced
- 3 c corn (2 cans drained)
- 1 1/2 t chili powder
- 1 t salt, more to taste
- 4 chipotle peppers from can, minced
- 1 c cream, sour cream, or whole milk
- 3 c cooked chicken, diced (2 cans)
- Cilantro, opt, for serving
Directions
- In a large pan over medium heat, warm oil. Saute veg.
- Add tomatoes, broth, potatoes, and seasonings and bring to a simmer. Cook until potatoes are soft.
- Add remaining ingredients and heat through.
