Original recipe from Ruralite magazine.
Ingredients:
- 3 lb potato or sweet potato, sliced or shredded (or a 3 lb bag frozen hash)
- 1 c diced onion
- 1 c cheese
- 1-2 c diced cooked ham
- opt: 1 lb chopped fresh or frozen broccoli
- salt and pepper to taste
- 1 c water
- 1/2 c yogurt or sour cream
- 1 t bouillon
Directions:
- Butter the sides and bottom of a slow cooker or instant pot.
- Add potatoes, onion, cheese, and ham, and optional broccoli. Sprinkle with salt and pepper and toss to distribute.
- In a small bowl, mix water and yogurt or cream with bouillon. Pour over potatoes.
- Cook in slower cooker on high for 4 hours, or in an instant pot for 20 minutes. Enjoy!
