Mushroom Potato Chowder

Ingredients:
  • 2-4 T butter and/or olive oil
  • 1/2 onion, chopped
  • 2 T flour
  • 1 t salt
  • 1/2 t pepper
  • 3 c water
  • 1 pound sliced mushrooms
  • 1 c chopped celery
  • 1 c diced potatoes
  • 1/2 c chopped carrots
  • 1 c milk
  • 1/4 c Parmesan cheese
Directions:
  1. Heat oil in a large saucepan, saute onion.  Add a 1/2 c water, then add flour, salt and pepper, stir into a paste.  Slowly whisk in remaining water.  
  2. Bring to a boil.  Add mushrooms, celery, potatoes, and carrots.  
  3. Reduce heat to low, cover and simmer 30 min or until tender.  Add milk and cheese, heat through.  Serve with fresh bread.  
  4. Does not freeze well.
