Ingredients:
- 2-4 T butter and/or olive oil
- 1/2 onion, chopped
- 2 T flour
- 1 t salt
- 1/2 t pepper
- 3 c water
- 1 pound sliced mushrooms
- 1 c chopped celery
- 1 c diced potatoes
- 1/2 c chopped carrots
- 1 c milk
- 1/4 c Parmesan cheese
Directions:
- Heat oil in a large saucepan, saute onion. Add a 1/2 c water, then add flour, salt and pepper, stir into a paste. Slowly whisk in remaining water.
- Bring to a boil. Add mushrooms, celery, potatoes, and carrots.
- Reduce heat to low, cover and simmer 30 min or until tender. Add milk and cheese, heat through. Serve with fresh bread.
- Does not freeze well.
